Breakfast muffins made with cottage cheese n almonds pancake batter

It's been so long that I have been here. But being away dosent mean that we have forgotten stuff...sometimes it can also mean that we like missing. You know when you are surrounded with people, you do not realise how much you need them and sometimes wish that they would go away for sometime and you can get your space and time.  And sometime these wishes are granted.  You will agree that for the first few hours you feel blissful and then comes the silly thought "I wonder what he is doing" and bam you start missing.  Each and every thought of being alone, me time, bliss and zen starts falling like dominoes. 

I guess staying apart for some time or taking time off for some time is a good thing..it makes you rethink about the place of that special someone in your life and makes you see the reason why you have them in your life...

This beautiful breakfast was a way to say thank you to my special man for taking such good care of me when I was down and cranky and filthy haha. And to let him know that yes I missed him when I was away.

To be honest I started off with making simple pancakes. .no big deal...then I saw this amazing freshly made cottage cheese and soaked almonds. The idea was to make a healthy  pancake but suddenly I thought I am not in a mood for pancakes. ....I want some muffins. So there it is.


Things you will need:
100 grams cottage cheese
2 tbsp all purpose flour
7-8 almonds soaked overnight
2 tsp granulated sugar
1/2 milk
1 tsp baking powder
1 egg
1 tbsp butter or oil
blueberry jam for topping


Method

Peel the soaked almonds and keep aside.
Pour all the ingredients except for the blueberry jam into a blender and blend till you get a smooth batter.
Grease the muffin moulds and pour the batter in them, leaving enough space for the muffins to rise.
Microwave it for 3 minutes (you can even bake them, I was in a hurry).
Let them cool down.
Dont worry if they dont look like muffins. The consistency would be like cheese cake.
Top it with bluberry jam or any jam or syrup of your choice.
Serve with some fresh fruits and coffee.
